Il risultato principale della nostra ricerca ha confermato che la comunicazione degli attributi etici addizionali offre a molte aziende biologiche una reale opportunità di differenziazione dei propri prodotti nel più vasto mercato biologico. Molti consumatori e produttori sono d’accordo sul fatto che la produzione biologica in conformità al regolamento UE sull’agricoltura biologica (834/2007) non rappresenta la ‘fase finale’ in riferimento a una produzione alimentare sostenibile ed etica. Un numero crescente di consumatori acquista prodotti che siano realizzati secondo standard ‘etici’ non attualmente ricompresi nelle norme previste dal regolamento UE sull’agricoltura biologica o che – in ogni caso – vanno al di là degli standard minimi ivi previsti....

Cheese liking and consumer willingness to pay as affected by information about organic production Organic Eprints

The present study aimed to assess the effect of information about organic production on Pecorino cheese liking and consumer willingness to pay. Mean scores of perceived liking were similar for organic cheese (OC) and conventional cheese (CC). Expected liking scores were higher for OC than for CC (P<0.001). For OC the expected liking was significantly higher (P<0.001) than the perceived liking expressed in blind conditions (negative disconfirmation), whereas for CC the expected liking was significantly lower (P<0.001) than the perceived liking expressed in blind conditions (positive disconfirmation). Communicating Ethical Arguments to Organic Consumers: A Study Across Five European Countries Organic Eprints

Additional ethical claims were tested with mock organic egg labels in five EU countries. The attitudes towards the advertising labels were assessed by multiple copy testing measures. A total of 156 individual responses were analysed. The study confirms the difficulty of conducting advertising research in a multicultural framework, and shows that additional local/ regional claims can reinforce the appeal of organic products .

In a world where more and more organic products are mass produced, and where most consumers have little – if any – contact with the organic farmers who have produced their food, many people feel that the underlying principles of the organic movement are coming under threat. According to our research consumers are mostly interested in additional ethical attributes like “higher animal welfare standards”, “regional/local production” and “fair producer prices” and they are willing to pay more for organic products which are produced following these higher standards. Consumer Perception of Local and Organic Products: Substitution or Complementary Goods? Organic Eprints

Many consumers are interested in local products because of the perceived benefits of freshness, stronger taste and higher quality. To consumers the origin attribute represents a strong purchasing criterion. With respect to organic produce, local food products may be perceived either as substitutes or as complementary. CONSUMERS’ KNOWLEDGE OF ORGANIC QUALITY MARKS Organic Eprints

The study was conducted as part of a EU-wide qualitative survey on consumer perception of organic products, carried out in 8 European Countries (Austria, Denmark, Finland, France, Germany, Great Britain, Italy and Switzerland). It aimed to investigate consumer motivations and barriers related to buying organic products, in order to better understand the consumer decision-making process. In particular, the proposed paper focused on: • the role of quality marks and certification labels on consumers’ knowledge of organic products; • those aspects which determine and facilitate consumers confidence towards organic products; • opportunities for the improvement of the communication and distribution strategy of these products.

Taking into consideration individuals’ cognitive reasoning, and assuming that consumption of organic food has involved a change of mind about food experiences and food habits, we have identified the concepts, stories and theories mentioned by respondents in their discourses about organic food. Regular consumers trust organic products because they believe that they are healthier and tastier than any other product. A growing stock of information supports their food choice and confidence in organic food. Effect of information about organic production on beef liking and consumer willingness to pay Organic Eprints

The present study was aimed to assess the effect of information about organic production on beef liking and consumer willingness to pay. Mean scores of perceived liking were higher for organic beef (OB) as compared to conventional beef (CB). Expected liking scores were higher for OB than for CB. For OB the expected liking was significantly higher than the perceived liking expressed in blind conditions (negative disconfirmation), whereas for CB no difference was observed. IMPROVING FOOD QUALITY FOR THE ORGANIC POULTRY MEAT SECTOR: A QUALITY FUNCTION DEPLOYMENT APPROACH Organic Eprints

The paper presents results from an Italian study on the development of the food quality for poultry meat into the organic sector, using the Quality Function Deployment (QFD) technique. Results show that among the visual characteristics of poultry meat consumers assign greater importance to attributes strictly related to the animal welfare issue. Price and product appearance (colour and fat presence) come as second. To meet these needs, producers can effectively operate along the supply chain by acting on: housing type, genotype lines and stocking density (animal concentration/mq). Information about these issues (labelling) should also be provided to the consumers.
